You could absolutely make vegetarian fillings - we had ones with cabbage, and other ones either apple! The dough is lovely and I think would be good with any filling!

Thank you! I can totally imagine the veggies in the winter markets in Mexico would be perfect! I’m definitely adding borscht to our regular menu rotation now that I know how good it is (I love beets so I’m not sure why it took me so long!!?)

So interesting Jessica. I started reading it b/c I love Borscht. When I became a vegetarian in my 20s it was one of the first recipes I made. Think I found it in Joy of Cooking. And it sounded weird and good, esp. w/ a dollop of sour cream on top. Then in Mexico had a German friend who always insisted on making it whenever she came to MX each winter, b/c the cabbage (and all vegetables) in MX are so fresh and good. The entire post was mesmerizing, and your doll collection sounds incredible. (love the Russian one btw). Pirozhki was a big deal where I grew up in the midwest. Must have been from a large Russian immigration at some point in time. They are good! Thanks for the entertaining post!
